I went to see Kate suspecting that I had a hormone imbalance and possibly PCOS and feeling totally frustrated by the lack of diagnosis and treatment provided by my G.P. It‘s said that the proof of the pudding is in the eating – and in my case it’s absolutely true.
From being a cuddly child, thanks mainly to my well-meaning parents who insisted I eat everything on my over-filled plate, I have been on diets most of my life. Also, due to my hectic life-style stress was taking its toll. Now at long last thanks to the advice in your excellent book ‘Whole health: Inspirational ideas for mind and body well-being’, and in particular to the personal coaching sessions, I am no longer dieting, or stressed – and I feel great.
Why the change? Your wonderful down-to-earth approach to explaining and encouraging me to eat healthily, and adopt a different attitude to food fitness and health, is so compelling that I felt honour-bound to at least try it – and the plain-simple truth is it works. There are no reprimands for the odd lapse but an understanding that we are all human – it happens. As a result of your excellent advice and support I now find that I am less likely to stray from the path of healthy eating; because I’ve discovered that I truly enjoy it, and the benefits it brings.

“I went to see Kim after suffering from skin problems for ten years. I was also prone to depression and lethargy. I had tried many different things to alleviate the skin problems: herbs, homeopathy, the pill, vitamin A. The doctor had just prescribed me antibiotics but I felt reluctant to try these. I came to see Kate about a year ago, as I was experiencing severe bloating and cramps - which never appeared to be triggered by anything in particular - as well as occasional acne outbreaks on my face, a condition that I had never previously encountered. After a couple of consultations, where I was told to try a wheat and dairy-free diet, Kate suggested I have my gut parasitology and .. test. When the results came back, it turned out I had a rare form of candida yeast in my stomach, which would explain not only my digestive discomfort, but also my skin problems and difficulty in losing weight. Kate immediately recommended a course of supplements, including probiotics to rebuild the good bacteria in my stomach, from which I saw immediate benefits.
Due to work commitments, I was unable to see Kate for a few months after my last visit, which made it difficult to keep up with my programme. I started seeing Kate Cook in 2004, suffering from digestive disturbances, stomach cramps and general discomfort after eating. Through testing, she was able to diagnose a gut parasite - blastocystis hominis, along with bacterial inbalances which were causing the symptoms. As I was on the verge of taking herbal treatments to treat the parasite, I discovered that I was pregnant with my first child, and was unable to take the tablets prescribed. A year later my father died, and I was diagnosed with autoimmune thyroid disorder and hypothyroid, which Kate (I believe rightly) thought to be caused by stress. She prescribed me supplements to boost my adrenal system, and my thyroid disorder has been normal for over one year now. I took supplements to rid the parasite and correct the bacterial imbalances in my gut during 2005 (once I had stopped breastfeeding my daughter).
I was feeling a lot better, and on the verge of taking a course of antibiotics in the hope of 'finishing the parasite off', when I became pregnant again and all bets were off! My son was born last October, and I recently took the antibiotic course to finish the attack on the parasite. I now feel almost completely well. I suffer only very occasionally with digestive disturbances, and these can usually be controlled through diet (less sugar). I have now reached a stage where I do not want to test for parasites again - I may or may not have them, but am happy that I have done all I can to rid them, and want to think positively about having a healthy intestinal system again. Kate was a great help in identifying the problem and helping me to manage it, working around two pregnancies as well. I am really grateful to her for helping me to overcome something which was a big and nasty part of my life, making it manageable and allowing me to get on with the important job of raising my two children!

I started seeing Sanna from the Nutrition Coach to see how I could use my diet to overcome the mid-afternoon exhaustion I was often experiencing. Prior to seeing her I was suffering from severe lack of energy, mood swings and uncontrollable needs for coffee and chocolate particularly around the 3/4pm on week days.
The first hour I spent with Sanna analysing my diet and requirements was amazingly useful. Everything she said just made so much sense. Finally I understood the impact you can have on your body by eating sensibly. Once aware of the types of food I should be focusing on and, critically, how easy it is to incorporate them into my diet, my new eating habits have made an enormous impact on my health and energy levels. She knows what is available and is realistic about what can be brought in from home so I am never stuck for options of healthy lunches. For years I have been suffering from polycystic ovaries syndrome and have struggled with my weight. I have tried so many low-fat and detox diets but none of them really worked due to the lack of motivation and I was totally depressed.
Recently I discovered that I also suffer from high blood pressure and high cholesterol. That really shocked me and I got even more depressed.
My family in Japan are quite healthy. I felt as if my life was ending and was so ashamed of myself.

I cannot recommend the Nutrition Coach enough..... the advice I got was the best I'd had since I started this journey of improving my health through diet.
I'd read a few books in the past and had tried to achieve a sense of optimal health, DIY style, but as is always the case, i'd neither had the motivation or all the necessary information/facts to hand. In particular, I believed that by changing my diet, specifically to a low-wheat and low-dairy diet, i wouldn't find any tasty and healthy alternatives to the food I liked. The preconceptions were very soon eliminated after having received a list of food companies, from Nutrition Coach Kate, that specialise in providing healthy and tasty variations on the usual mass produced and over-refined foods we so love and hate. I also found that my local supermarkets stock some of the main foods I wanted to purchase: Wheat Free Bread by The Stamp Collection, Oatly Oat Milk and Rice Dream. I also found that a handy hand blender is an essential kitchen tool required for making healthy and tasty smoothies and home-made soups! In short, this experience/change in diet has only been beneficial to me. I've also found i'm a great cook!
Good NUTRITION - Benefits
Not having cravings for sweet foods is liberating. I was the kind of person who could not walk past a patisserie without feeling my mouth watering. Of course, the benefits of the change in my diet are many more, such as, more energy, weight loss, great skin and shiny, glossy hair! The results are amazing but they don't come overnight, you need to sustain the changes for at least 3 months, in my experience, before seeing the effects. However, the longer you do it, the easier it gets.
Having Kate as coach, helped me because she gave me guidelines that are easy to follow and that can adapt to the way I live and the things I like. Having a nutrition coach helped me also in terms of having accountability to someone, as well as being able to ask questions and receive replies by email, so I never felt disconnected from my objectives.
The 80/20 rule is my favourite because nothing works perfectly 100 percent of the time. You are bound to lapse and forget and want that chocolate cake, which is absolutely fine as long it does not happen often. The whole nutrition thing for me is a learning process about what works and what doesn't work for me, and fine tuning it so it becomes second nature.

"Growing up in a Chinese community where everyone is so tiny had always made me felt like the fat and the ugly one. My mum is a size 6 and so as my sister! Even my dad is lighter than me! Having gained a few kilos in university, I went home for my first holiday and saw the horror on their faces when I arrived at the airport - they couldn't even recognise me! This was then followed by constant laughing and joking by every family member.

"I visited Kate after deciding that I could no longer tolerate the abdominal bloating, pains and constipation that I had suffered for about 5 years. Kate's advice was very practical and she reassured me that I don't have to live with my symptoms. Nutrional therapy really has helped me enormously. Kate was great with me as I was very grumpy when we first met, unhappy with my body and rather depressed. I have found by following Kates ideas of what I should eat I am never hungry and in fact end up eating more than I was before but healthy things rather than unhealthy. I now eat masses of fruit and vegetables and know which ones to go for and find them absolutely delicious. "After years of watching my blood pressure and cholesterol rise I decided to look for alternatives to my medication. I'd read an article in an in-flight magazine about the benefits of eating nuts and this made me think about the food I was eating. "I had been working in Afghanistan in May 2003 and returned to the UK a month later feeling unwell (Diarrhoea and general malaise). After numerous visits to my GP I was diagnosed as having a parasite.
After a course of anti-biotics I was given the all clear, however I was still feeling unwell; very lethargic, pains in my stomach and breastbone and this prompted me to seek the help of a nutritionist. On my first visit I was advised to avoid wheat and dairy and to take a comprehensive parasitology test. I followed the dietary recommendations, but still only about 1 out of 10 of them. My test results revealed I had another parasite, which I was relieved about as there had to be an underlying problem.
After a 3 month course of supplements to rebalance my levels of gut bacteria I was feeling up to a 4 out of 10. Further tests for my adrenal glands revealed that they were "on the floor", hence my total lack of energy. The programme to support this had an almost overnight effect and I can honestly say I nearly feel 10 out of 10. I was committed to the programme even though it was slow progress, but my knowledge of nutrition increased immensely.
